Black Garlic – classic, white garlic, which has been fermented under specific conditions – at high temperature and high humidity. Browning of the plant in such circumstances is a natural phenomenon and is due to the reorganization of amino acids and sugars. The processes taking place in garlic have a significant impact on the sensory quality and physicochemical properties of the tuber – not only the color of garlic changes, but also its taste, smell and consistency. During fermentation, the content of valuable substances in the plant is also changed – allicin, a popular compound found in white garlic, which is responsible for the specific taste and smell of the tuber, is converted into other water-soluble components, incl. S-allylcysteine (SAC), which has a positive effect on the health-promoting properties of black garlic.

Suggested usage
